Alfredo Pasta Primavera

The Menu: Alfredo Pasta Primavera

Is the squash supposed to be a phone?


The Recipes:
Pasta Primavera. Wash and chop vegetables, and saute. Mix into pasta, add sauce, and toss for a minute over heat to warm before serving. What went into the sauce I don't remember, but it definitely wasn't worth repeating. (Tonight we learned the importance of stirring well - if you don't, heat builds up in one corner of the pot, the sauce explodes, and you get to take the stove apart to clean it out before the cream goes bad and start smelling...). Stay tuned for future *sucessful* attempts.

Chicken, Fried Rice, Halloween Mashed Potatoes, and Broccoli

The Menu: Chicken, fried rice, (halloween) mashed potatoes, and broccoli.

 

 

The Recipes:
Chicken. See 10/3 post. The only modification is to cut raw chicken into pieces because this way people can eat however much they want.
Fried rice.
Halloween mashed potatoes. Wash potatoes and cut into chunks. Boil until soft, then drain. Add milk, butter, and salt to pot and mash, either with the potato masher or the electric mixer. There was a last minute futile attempt to color them orange for Halloween, but the food coloring wasn't strong enough.
Broccoli. Cut, wash, and place in pan with a few inches of water. Check for doneness with a fork; serve it up in a classy loaf pan.

Homemade Pizza

The Menu: Homemade pizza, completely from scratch :)

 

  

  

  

  

 

The Recipe: 
Crust. Mix together flour and salt, then stir in water and honey. Add water and flour as needed to achieve the desired consistency.
Pizza. The only thing I know about the sauce was that it was a complete disaster, so I'm going to leave it out of this recipe. (With enough tomatoes, it's not necessary anyway.) Spread cornmeal on a cookie sheet to prevent dough from sticking. Spread dough to desired thickness and cover in tomatoes, fresh basil leaves, and cheese, in whatever order and amount you want. Drizzle with olive oil and sprinkle the following spices to taste: oregano, dried basil, black pepper, garlic, and salt. Bake at 450 until cheese is melted or until you can't wait any longer.

Chili & Jalapeño Cornbread

The Menu: Chili, jalapeño cornbread, and green beans.

 

  

The Recipes:
Vegetarian Chili. Saute onion and green peper for a few minutes, until soft and the onion is clearer. Add kidney beans (we used both dark and light), diced tomatoes, chili powder, shredded carrots, garlic, oregano, black pepper, and other spices to taste. Simmer for a long time, stirring frequently to prevent sticking and burning. Stir in the corn and shredded cheddar cheese around the end. Serve with extra corn and shredded cheese.
Green beans. Cut off ends of each green bean, rinse well. Place in saucepot with 2 inches of water and cook until as tender as you want them. (It's a good idea to periodically check done-ness with a fork, just be careful of the steam when you take the lid off.)

The First Feast

The Menu: Broiled Chicken with Famous Dave's Country Roast Chicken Seasoning, Pan fried potatoes, Bak Choy & Ramen Salad, Quiche, & Tofu & Onion Stir-fry.


 

  


 

The Recipes:
Chicken (boneless skinless chicken breats). With awareness that chicken is raw meat and is thus very germy, cut off and dispose of excess fat and place chicken in a pan lined with tin foil (makes the pan much easier to clean later). Sprinkle with however much seasoning as you want, massaging the chicken to rub it in. (Have someone else sprinkle more seasoning on if necessary since your hands have chicken germs.) When seasoned to your satisfaction, broil for 5-10 minutes, or until done in the middle.
Pan-fried potatoes. Wash potatoes and cut into chunks. Add to hot olive oil in a frying pan and sprinkle with salt and pepper to taste. Stir constantly to avoid sticking and burning. Add olive oil & spices as needed.
